About This Coffee
El Salvador Santa Ana is one of the first coffees we ever purchased and an absolute crowd favorite. Grown in the volcanic soils of Santa Ana, this coffee boasts a rich and full bodied profile with comforting notes of cocoa and almond rounded out by a balanced acidity and excellent sweetness. Our roast application will be considered "medium" by most. The aim in roasting, as always, is to balance sweetness, which comes directly from the caramelizing of sugars during roasting, with the subtle, more delicate flavors that originate primarily from the particular varietal of coffee plant - in this case bourbon and pacas - and degree of fermentation that occurs during processing.
